Cauliflower Couscous

Ingredients

  • 1 head of cauliflower
  • 2 carrots chopped into tiny pieces
  • Handful of chopped parsley
  • Handful of chopped sun dried tomatoes
  • EVOO to coat pan
  • 1/4 toasted pine nuts

1. Heat olive oil in a pan on med

2. Grate the cauliflower with a cheese grader until the entire head is grated, should be a delicate tiny texture

3. Add all ingredients to warm skillet and cook through until all is heated and flavors can mingle
