- 1 Large Cucumber
- 1 cup Cherry Tomatoes
- 1/3 cup Loosely Packed Chopped Fresh Basill
- 3 Tablespoons Extra Virgin Olive Oil
- Salt and Pepper
- Wash and skin the cucumber. Cut it in half lengthwise, then into half inch slices. Place in a mixing bowl.
- Cut the cherry tomatoes in half and add to the cucumbers with the basil.
- Toss ingredients with the olive oil, and salt and pepper to taste.
- Serve well chilled.
